During our initial consultation we’ll identify your current food cost %

First…

INGREDIENT DATABASE
We’ll build out your custom ingredient database using The Ultimate Ordering + Budgeting Tool.

The database allows you to compare ingredient quality + costs across vendors, and links to our recipe costing tool providing real-time analysis of costs and profitability for each product or menu item.

NExt…

RECIPE COSTING
We’ll jump into recipe costing and see how each of your products stack up to our new food cost target.

It’s common to find some items with food cost below your new target (that’s great!), some that are right on target (also great), and some that are too high (they’ll be our focus in step 3).

Then…

MENU AUDIT + STRATEGY SESSION
During a 1-on-1 strategy session I’ll present cost-saving recommendations, possible recipe modifications and (as a last resort) price increases. Then we’ll create a plan of action to implement the changes and cost saving strategies with your team.

I’ll also make sure everyone is trained on how to use the new ingredient database + recipe costing tools.

BACKGROUND
After a few years of achieving a range of acceptable, high, and back to acceptable food margins, an LA-based caterer knew it was time to put an end to the rollercoaster once and for all, get consistent food cost + increase profits.

PROBLEM
All the recipes were in her head, there was no system for ordering or controlling costs, and there was a missing link between her sales + kitchen teams that I knew could help her price menus right + stay within their food budget 100% of the time.

SOLUTION
I created a custom Ordering + Budgeting Tool, followed by extensive recipe costing, and a menu audit + strategy session that identified high-cost ingredients, helped us price her menu correctly, and identify menu items that should be removed. Lastly I created a custom proposal builder to help meet client budgets + profit goals for every event.

OUTCOME
We reduced food costs by 2%, and with the use of our tools + her staff’s commitment to a zero-waste kitchen, they reduced their food costs an additional 2%!
